Vegan Sunday Lunch

I had some (non-vegan) friends over for lunch on Sunday, which gave me a good excuse to cook some dishes that I wouldn’t normally make just for myself.

For starters we had home-made hummus. I’m a bit embarrassed to admit that I’d never actually made hummus before, as it’s pretty much a vegan basic, but it was really easy, and I don’t think I’ll ever buy it ready-made again. I added a pack of sundried tomatoes that I’ve had for ages and never got round to doing anything with, which added some nice red bits. Served with toasted pitta bread (or Arab bread as it’s called here in Slovakia) cut into strips.

For the main course I went all out and made Isa Chandra Moskowitz’s epic Nirvana Enchilada Casserole. This is a bit of a monster to make, as it requires making the white sauce, the enchilada sauce and the filling, before combining them and baking the result. I adapted the recipe slightly, to accommodate my mushroom-phobic friend. I left out the potatoes, and roasted some sweet potatoes instead, and I substituted summer squash (aka pattypan squash) for the mushrooms. But otherwise I followed the recipe faithfully, and did lots of washing up as I went along! But the result was definitely worth it. My two guests ate loads, took some home, and I finished eating what was left last night. So it’s a big recipe.

For dessert I made apple crumble (or apple crisp if you’re American), which took care of the apples that have been falling off the trees in the garden. Served with a creamy coconut topping. And then we just sat around talking and drinking wine for the rest of the afternoon.

It really was the ideal way to spend a rainy Sunday afternoon.
