Winter warmer soup (vegan)

Today I woke up to an icy Piešt’any. Overnight everything had turned white and it was very, very cold. So what’s better on a cold day than a nice hot bowl of soup. This is my recipe for a soup involving red wine and lentils – guaranteed to warm you up on the coldest days. And once you have opened a bottle of wine and removed the glass you need for the soup you can drink the rest and forget the cold! (If you don’t drink alcohol you can just make it without the wine – it’s still good).


3 tablespoons of extra virgin olive oil
1/2 teaspoon of mustard seeds (optional)
A large red onion – peeled and chopped
2 large cloves of garlic – peeled and sliced
A very large leek – cleaned and sliced
1 red pepper – sliced
2 orange peppers – sliced
1 cup red lentils – you could use canned lentils for this but I used dried ones
575ml vegetable stock
1/2 teaspoon dried thyme
A pinch of dried rosemary
Salt and pepper to taste
1 large glass of red wine
1 400g tin of tomatoes
2 tablespoons of tomato puree
Juice of half a lemon

Pour the olive oil into a large saucepan.
Add the onions, garlic, leek and peppers and fry until softened, stirring regularly.
Add the lentils and toss with the other ingredients so they are covered in oil.
Add the herbs, seasoning, stock, tomatoes, tomato puree and red wine.
Bring the mixture to a boil and cook for around 20 minutes until the lentils are cooked and the wine has reduced slightly.
Turn off the heat and add the lemon juice.

Serve and enjoy – preferably with some warm crusty bread.
